Six Seasons: A New Way with Vegetables

A huge part of Ayurveda relates to diet.   The main concept is to eat with the seasons; makes sense, right?  This way you are ingesting whatever is the freshest!

With this is mind I give you an amazing cookbook; Six Seasons: A New Way with Vegetables by Joshua McFadden.  This is an amazing cookbook with beautiful dishes and pictures.  It is divided into recipes by every season including Summer which is split into three sections, as it is the busiest harvest season.

The author (McFadden) comes from a farming family, turned NYC chef, and ultimately ends up back on the farm (and then writing a cookbook).  He enjoys working with ingredients fresh from the earth.  He wrote the book for all levels of home cooks hoping to inspire everyone to eat with the seasons.  The recipes are simple to follow and so delicious from what we have tried so far!  One of the fall risotto recipes utilizing butternut squash is one of my favorites.

He gives great advice on everything from “must haves” in your kitchen on how to shop at a farmer’s market.  Don’t be fooled by the fact the title has vegetables in it.  There are plenty of recipes involving meat if you are not vegetarian.  (But if you are, you can always adjust the recipes like I do!)

My favorite 2 quotes from the book are “Cherish the vegetables when they’re at their best” and “Don’t buy tomatoes in the winter.” Words to love by my friends!  

I am so looking forward to trying out some of the other recipes as my harvest season begins!
